Ingredients

· Fresh brewer's yeast: 10 g
FOR THE DOUGH
· 00 flour: 400 g
· Water at room temperature: 180 g
· Extra virgin olive oil Il Cavallino Special Edition: 100 g
· Malt: 10 g
· Salt: 10 g
Preparation
To make the oil sandwiches, first prepare the poolish: pour the Manitoba flour into a bowl, add the water and brewer's yeast and mix well with a spoon until the mixture is smooth and homogeneous. Cover the bowl with cling film and let it mature at a temperature of 25 ° -28 ° for about an hour (or until doubled in volume). After this time, pour the 00 flour into the bowl of a planetary mixer equipped with a hook, then add the malt, water and matured poolish. Work the ingredients for about 10 minutes. When the dough is well strung, add the extra virgin olive oil, the Cavallino Special Edition and the salt and work everything again until the mixture is smooth and soft. Transfer the dough to the floured work surface and pirlatelo to obtain a firm ball. Transfer the ball of dough to a large bowl, cover with cling film and always let it rise at a temperature of 25 ° -28 ° for about 2 hours or until doubled. After the rising time has elapsed, transfer the dough back to the floured work surface and roll it out with a rolling pin to form a 40x35 cm rectangle, then roll it on the longest side to obtain a 40 cm long loaf. Cut the loaf into 6 pieces weighing 150 g each. Now roll out each portion of dough with a rolling pin to form an oval of about 25x10 cm, then roll it up on the shorter side. Once rolled up, place the rolls on a dripping pan lined with parchment paper with the sealing side facing down and let them rise for another hour, always at a temperature of 25 ° -28 °. Then bake in a preheated static oven at 190 ° for about 30 minutes: they should be golden on the outside and soft on the inside.
