Preparation
  • Shrimps: 500 g
  • Il Cavallino Traditional extra virgin olive oil: 15g
  • Courgettes: 2
  • Carrots: 2 00
  • Flour: to taste
  • Fine salt: to taste
  • Black pepper: to taste
  • White wine: ½ glass

To prepare the prawn skewers, start by washing the courgettes well, remove the ends and cut them into julienne strips. Peel the carrots and also cut them into julienne strips, then leave them on a sieve so that they lose excess water. Shell the prawns and after having floured them, thread them onto wooden skewers. Put the oil in a pan and add the prawn skewers, add the wine, salt and pepper. Remove the skewers and leave them aside to keep warm, add more Il Cavallino Tradizionale extra virgin olive oil to the pan and add the vegetables which should cook for a few minutes so that they are still quite crunchy, then add salt. Serve the prawn skewers placed on a bed of vegetables and accompanied by lemon wedges.
