COOKIE WITH OLIVE OIL

Preparation Ingredients:
· All-purpose flour: 280 g
· Extra virgin olive oil (Il Cavallino Tradizionale): 50 ml
· Sugar: 100 g
· Eggs: 2
· Baking powder: 10 g
· Salt: to taste
· Lemon zest: 1
· Vanilla pod: 1
· Egg yolks: 1

Instructions: In a large bowl, crack the whole eggs and add an extra yolk. Mix vigorously with sugar for about 60 seconds.
Without stopping, gradually incorporate the Il Cavallino Tradizionale extra virgin olive oil, the vanilla seeds extracted from the pod, and the grated lemon zest.
In a separate container, sift together the flour and baking powder. Add a pinch of salt. Pour this dry mix into the liquid mixture of eggs and sugar. Start working the dough carefully: when all ingredients are well blended and you've obtained a smooth and homogeneous consistency, wrap the dough in a sheet of plastic wrap and let it rest in the refrigerator for at least 30 minutes.
After this time, roll out the dough on a lightly floured work surface until it reaches a thickness of about 5 mm. Using a cookie cutter or a glass, cut out circles of about 5 cm in diameter. Place these discs on a baking sheet lined with parchment paper.
Bake in a preheated oven at 180°C (static oven) for about 15 minutes. Once ready, remove the cookies from the oven and let them cool completely before storing. For optimal preservation, store them in a tin box or an airtight container.
