- Pearl barley: 150 g
- Pearled spelled: 150 g
- Rocket: 30 g
- Cherry tomatoes: 200 g
- Cherry mozzarella: 100 g
- Il Cavallino Toscano IGP extra virgin olive oil: to taste
- Fine salt: to taste
To make the summer spelled and barley salad, start by boiling the cereals: place the pearled barley and spelled in a large pan, add plenty of salted water to cover the cereals and boil them following the instructions on the package; Once cooked they will have absorbed part of the water, drain them and pass them under cold running water to stop the cooking and cool them; transfer them to a large bowl and set aside. Now take care of the tomatoes: wash them under running water and cut them into small wedges, eliminate the conservation water from the mozzarella pieces and cut them into cubes. Peel the rocket and rinse it well under water; also coarsely chop the rocket leaves. At this point take the bowl with the cereals and add the cherry tomatoes, mozzarella and rocket. Drizzle with plenty of Il Cavallino Toscano IGP extra virgin olive oil and season with salt if necessary. Mix with a spoon so that the cereals are flavored with the seasoning. Your summer spelled and barley salad is ready to be enjoyed and served cold.
