Preparation · Salmon: 800 g
· Cherry tomatoes: 350 g
· Dried oregano: 1 sprig
· Extra virgin olive oil Il Cavallino Special Edition: 30 g
· Fine salt: as needed
· Garlic: 1 clove
· Pitted black olives: 70 g
· Capers in vinegar: 5 g

To prepare Mediterranean-style salmon fillets, start by washing the cherry tomatoes, then dry them and cut them into quarters. Transfer them to a large bowl, add the peeled and halved garlic and the chopped dried oregano. Add the oil and salt, mix everything together, and cover with plastic wrap. Let the cherry tomatoes marinate for about 1 hour at room temperature.
After this time, take the salmon fillet and use tweezers to remove any bones. If there is skin, remove it as well. Then cut the fillet into 4 pieces of equal thickness. Take the marinated cherry tomatoes, remove the garlic, and transfer them to a lightly greased baking dish.
Place the salmon fillets on top of the cherry tomatoes and use a spoon to place some cherry tomatoes on top of the salmon. Season with salt and pepper, add the black olives and capers. Bake in a preheated static oven at 180°C (356°F) for about 15 minutes (if you want to use a fan-assisted oven, cook at 160°C/320°F for about 10 minutes). Once the cooking time is up, remove from the oven and serve your Mediterranean-style salmon fillets while still hot!
