Preparation
· Pork ribs: 1 kg
· New potatoes: 1 kg
· Rosemary: 1 sprig
· Garlic: 2 cloves
· Paprika: 1 tsp
· Il Cavallino Special Edition extra virgin olive oil: 20 g
· Fine salt: to taste
· Black pepper: to taste
To prepare the baked ribs started with the potatoes: wash them well. Cut them into wedges, peel the garlic leaving the whole cloves and cut them into 2 parts (you can remove the core if you prefer). In a large bowl, pour the potatoes, spare ribs, garlic, rosemary and paprika. Also season with salt and pepper and drizzle with oil. Mix well with your hands. Transfer everything to a large baking tray, cover with aluminum foil and bake in a preheated static oven for about 3 hours at 160°. After 3 hours, remove the aluminum foil and raise the oven temperature to 220°. Let them cook for another 45 minutes. Serve the ribs in the oven piping hot!
