TOMATOES SOUP

Preparation To prepare the tomato soup, start by washing the tomatoes. Then dry them and with a small knife remove the stalk and the skin. Cut them in half and empty them of the seeds and juice. Once cleaned, chop them all up. In a saucepan, heat the Il Cavallino Special Edition extra virgin olive oil together with a peeled clove of garlic, after a minute add the tomatoes and mix, leaving the flavors to infuse for a few minutes. Then add the basil leaves, salt and give one last stir before covering with a lid and letting it cook, over low heat, for at least 35 minutes. Once the time has elapsed, remove the basil and garlic, then using an immersion blender blend the tomatoes in order to obtain a smooth puree. Let it cook for another 25-30 minutes so as to let it dry and shrink a little; then turn off the heat and let it cool at room temperature. At this point your tomato soup will be ready, we have chosen to serve it in small bowls and garnish it with fresh cream. If you want to do it too, it's really very simple, just pour a little cream on the soup and form a spiral with a spoon. Finally, give a touch of color and extra aroma to your tomato soup by adding a basil leaf and serve.
